Olio Nuovo season in Tuscany

Between October and November is the season of the Olio Nuovo or Novello (New Oil), and every Florentine lover of this green gold can't wait for this time of year to arrive in order to get a bottle of it. In fact, getting a large stock of it is no use, because the Olio Nuovo will not remain new forever.
If it is true that the classic extra virgin olive oil is the king of the Italian table, Olio Nuovo is an even more valuable, precisely because it is an ephemeral product. In fact, it can only be tasted during a short timeframe, within 2 months of its bottling.

Olio Nuovo is produced with the first olives of the new harvest. It is an unfiltered and not decanted oil, which is pressed and immediately bottled to maintain its particular fragrance.

The freshly picked olives must be cold pressed, within 5 hours, and their first pressing produces an intense green oil, with a high concentration of polyphenols, which give it a strong antioxidant power.

 

3 SIMPLE WAYS TO ENJOY OLIO NUOVO

On fettunta

"Fettunta" literally means "oily slice", and is a grilled slice of bread, rubbed with garlic and then seasoned with olive oil, salt and pepper. There could be nothing simpler and nothing more addictive! Even more so if you use Olio Nuovo instead of regular olive oil.


 

With beans

Boiled cannellini beans are another cornerstone of Tuscan cuisine. Just sprinkle some Olio Nuovo on this earthy dish and you'll never want to season them with anything else.


 

In pinzimonio

Those who love raw vegetables will certainly appreciate this dish. Pinzimonio is a way of eating fresh vegetables such as carrots, celery, artichokes, radishes, Belgian endive or Roman cauliflower (also known as Roman broccoli). Just wash and cut these vegetables and dip them into a little bowl full of Olio Nuovo, salt and pepper. The healthiest and most delicious dish you will ever eat. Perfect as an appetizer or side dish and as an aperitif.
